Soave’s shelf life

The Consorzio vini Soave and the University of Verona presented ‘Simposio’’. This is a project developing the technologies necessary to predict the shelf-life of Soave wines, combining electrochemical analysis, IoT solutions and AI techniques. The aim of the project is to improve the production techniques, increasing the longevity of the wine and reducing the doses of sulphites.

The Consorzio vini Soave is actually engaged in some university projects concerning sustainable viticulture, landscape protection and innovation in the wine industry. Our aim is to improve the quality of Soave, through technical knowledge to be shared with all manufacturers” explains Aldo Lorenzoni, CEO of the consortium.
